Zucchini "Noodles" with Roasted Vegetables and Broccoli Pesto

This vibrant, colorful dish is one of my standbys. Veggies that taste like fancy pasta? Yes please!

Cauliflower
Red Pepper
Zucchini 

Broccoli Pesto: 
1/4 Cup Olive Oil 
2 Tb Butter 
1 Small Clove Garlic 
1/2 Head Broccoli 


 Oven-roast the pepper and cauliflower with a little olive oil and sea salt. 
    Blanch the broccoli in boiling water until bright green and softened. 


Cream broccoli in a food processor (or blender) with butter, olive oil, and garlic and salt to taste.

Julienne the zucchini and drop in in boiling water for a few minutes. 
Combine the zucchini, vegetables, and pesto and enjoy!
